Ingredients

  • 1.5 lbs chicken breast, shredded
  • 3 cans cannellini beans, rinsed and drained
  • 4 cups chicken broth, low sodium
  • 1 tbsp fresh ginger, minced
  • 3 cloves garlic, minced
  • 4 oz diced mild green chiles
  • 1 tbsp soy sauce
  • 1 tsp ground cumin
  • 1 tbsp neutral oil

Method

  1. Heat oil in a large heavy-bottomed pot over medium heat.
  2. Sauté ginger and garlic until fragrant, being careful not to burn them.
  3. Stir in the cumin and toast for 30 seconds to release aromatic oils.
  4. Pour in chicken broth and two cans of beans, reserving one can for later.
  5. Simmer the mixture for 15 minutes until the beans are soft.
  6. Use an immersion blender to process half the liquid base until silky and thick.
  7. Stir in the shredded chicken, the remaining can of whole beans, green chiles, and soy sauce.
  8. Continue to simmer until the chicken is heated through and flavors are melded.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. For a thicker consistency, you can blend a higher percentage of the beans.
