Ingredients
  

  • 1 lb ground beef (85/15 lean)
  • 4 large flour tortillas
  • 20 oz red enchilada sauce (non-alcoholic)
  • 2 cups shredded sharp cheddar cheese
  • 1 can black beans, drained and rinsed
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • Salt to taste

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Brown the ground beef in a large skillet over medium-high heat until fully cooked.
  3. Drain the excess fat from the skillet.
  4. Stir in the black beans, cumin, garlic powder, and a pinch of salt until well combined and fragrant.
  5. Remove the skillet from the heat and let the mixture cool slightly.
  6. Spoon the beef and bean filling into the center of each flour tortilla.
  7. Tuck in the sides and roll each tortilla tightly to form a burrito.
  8. Place the burritos seam-side down in a baking dish.
  9. Pour the red enchilada sauce evenly over the burritos.
  10. Sprinkle the shredded cheddar cheese over the top.
  11. Bake for 25 minutes or until the sauce is bubbling and the cheese is melted and golden.

Notes

You can assemble these burritos ahead of time and store them in the refrigerator before baking. For a fresh touch, garnish with chopped cilantro, diced tomatoes, or a dollop of sour cream after baking.
