Always use freshly grated parmesan cheese rather than pre-shredded to ensure the sauce melts into a smooth consistency without clumping. Keep the heat on the sauce moderate to avoid breaking the dairy emulsion. For the best texture, use bronze-cut pasta which holds sauce better than standard varieties.
