  • 1.5 cups parmesan cheese, freshly grated

  • 0.25 cup chicken broth

Method
 

  1. Boil a large pot of salted water and cook fettuccine until al dente, reserving 0.5 cup of pasta water before draining.
  2. In a large skillet over medium-high heat, sear the chicken breasts until golden brown and cooked through, then remove from the pan.
  3. In the same skillet, melt the butter and add the minced garlic, cooking until fragrant.
  4. Pour in the heavy cream and chicken broth, simmering gently until the sauce begins to thicken slightly.
  5. Whisk in the parmesan cheese until melted and the sauce is smooth and velvety.
  6. Add the cooked pasta and sliced chicken back into the skillet, tossing to coat thoroughly.

Always use freshly grated parmesan cheese rather than pre-shredded to ensure the sauce melts into a smooth consistency without clumping.
