  • 1.5 lbs chicken breasts, boneless, skinless and sliced thin
  • 1/2 cup sun-dried tomatoes, oil-packed and chopped
  • 1 cup heavy cream
  • 1/2 cup low-sodium chicken broth
  • 1/2 cup freshly grated parmesan cheese
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes
  • Salt and pepper to taste
  • Olive oil for searing
  • Fresh parsley for garnish

Method
 

  1. Season chicken breasts with salt, pepper, and oregano on both sides.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Cook chicken until golden brown on both sides and fully cooked through, then set aside.
  4. In the same skillet, sauté minced garlic until fragrant.
  5. Add sun-dried tomatoes and red pepper flakes to the pan.
  6. Pour in chicken broth and scrape the bottom of the pan to release browned bits.
  7. Stir in heavy cream and parmesan cheese, simmering until the sauce thickens slightly.
  8. Return the cooked chicken breasts to the skillet with the sauce.
  9. Simmer for two minutes until the chicken is heated through.
  10. Garnish with fresh parsley before serving.
