Ingredients
Method
- Select the Sauté function on your Instant Pot and heat olive oil until the display reads Hot.
- Add the cubed chicken to the pot and sear until golden brown on all sides, then remove and set aside.
- Deglaze the pot with chicken broth, scraping the bottom with a wooden spoon to remove any browned bits.
- Add the minced garlic and sun-dried tomatoes to the liquid.
- Return the seared chicken pieces to the pressure cooker and secure the lid.
- Set to pressure cook on High for 5 minutes, then perform a quick release.
- Open the lid, stir in the heavy cream and Parmesan cheese, and simmer on Sauté until thickened.
- Fold in the fresh baby spinach until wilted and serve warm.
Notes
Ensure you deglaze the pot thoroughly to prevent a burn error. You can swap heavy cream for full-fat coconut milk for a dairy-free variation. This dish pairs excellently with pasta, rice, or crusty bread to soak up the creamy sauce.
