  • 8 oz cremini or white button mushrooms, sliced
  • 2 cups low-sodium beef broth
  • 1 cup sour cream
  • 12 oz wide egg noodles
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon oil (for noodles)
  • Salt and pepper to taste

Method
 

  1. Bring a large pot of salted water to a rolling boil.
  2. Cook egg noodles according to package instructions until al dente.
  3. Drain noodles and toss with a light drizzle of oil to prevent sticking.
  4. Heat a large skillet over medium-high heat and brown the ground beef, breaking it into small crumbles.
  5. Drain excess fat from the skillet.
  6. Add diced onions and mushrooms to the skillet and sauté until soft and browned.
  7. Stir in the minced garlic and cook for 1 minute until fragrant.
  8. Pour in the beef broth and simmer for 5-8 minutes until slightly reduced.
