Ingredients

  • 1.5 lbs lean ground beef (90% lean)
  • 32 oz frozen hashbrowns, slightly thawed
  • 2 cups sharp cheddar cheese, shredded
  • 1 can cream of mushroom soup
  • 1 cup sour cream
  • 1 tsp onion powder
  • 1 tsp garlic powder

Method

  1. Preheat your oven to 375 degrees Fahrenheit.
  2. Brown the ground beef in a large skillet over medium-high heat until fully cooked.
  3. Drain the excess fat from the skillet thoroughly.
  4. In a large mixing bowl, combine the cooked beef, thawed hashbrowns, cream of mushroom soup, sour cream, onion powder, and garlic powder.
  5. Fold in half of the shredded cheddar cheese until evenly distributed.
  6. Transfer the mixture into a greased 9x13 inch baking dish.
  7. Top the casserole with the remaining shredded cheddar cheese.
  8. Bake for 45 minutes or until the cheese is melted and bubbling and the potatoes are tender.

Notes

For the best melting results, shred your own cheddar cheese from a block. Thawing the hashbrowns slightly ensures even cooking throughout the casserole. This dish stores well in the refrigerator and can be reheated for easy lunches throughout the week.
