Ingredients
  

  • 2 lbs ground beef (90/10 lean blend)
  • 3 cans whole mild roasted green chiles
  • 2 cups sharp cheddar cheese, shredded
  • 2 cups Monterey Jack cheese, shredded
  • 1 cup queso fresco, crumbled
  • 4 large eggs, whisked
  • 1 cup milk
  • 1/4 cup all-purpose flour
  • Salt, pepper, and cumin to taste

Method
 

  1. Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish.
  2. Heat a large skillet over medium-high heat and brown the ground beef thoroughly.
  3. Drain excess fat and season the beef with salt, pepper, and cumin.
  4. Place a single layer of whole green chiles at the bottom of the prepared baking dish.
  5. Spread the seasoned ground beef evenly over the layer of chiles.
  6. Sprinkle half of the shredded cheddar and Monterey Jack cheeses over the beef.
  7. Repeat the layers starting with the remaining chiles, beef, and remaining cheeses.
  8. In a bowl, whisk together the eggs, milk, and flour until smooth.
  9. Pour the egg mixture evenly over the entire casserole.
  10. Top with the crumbled queso fresco.
  11. Bake for 40 minutes or until the top is golden brown and the center is set.
  12. Let the casserole rest for 10 minutes before serving.

Notes
