Ingredients

  • 1.5 lbs chicken breast, sliced into bite-sized strips
  • 12 oz linguine or fettuccine
  • 4 tbsp unsalted grass-fed butter
  • 6 cloves garlic, minced finely
  • 0.5 cup chicken broth
  • 0.5 cup parmesan cheese, freshly grated
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp olive oil
  • Salt and black pepper to taste

Method

  1. Boil a large pot of salted water and cook the pasta according to package instructions until al dente.
  2. Sear the seasoned chicken strips in a large skillet over medium-high heat with one tablespoon of olive oil until golden and fully cooked.
  3. Remove the chicken from the skillet and set it aside on a plate.
  4. Melt the butter in the same skillet and sauté the minced garlic for sixty seconds until fragrant.
  5. Deglaze the pan with chicken broth and simmer for two minutes to reduce the liquid slightly.
  6. Return the chicken to the pan and add the cooked pasta.
  7. Add the grated Parmesan cheese and a splash of reserved pasta water if needed to create a glossy emulsion.
  8. Toss everything together over low heat until the pasta is well-coated and creamy.
  9. Garnish with fresh chopped parsley before serving.

Notes

Ensure you reserve about half a cup of pasta cooking water before draining; the starch in the water is essential for creating the glossy, emulsified sauce. Use low-sodium vegetable stock if you prefer a different flavor profile. The key to the dish is not overcooking the garlic, so keep the heat moderate when sautéing.
