Ingredients

  • 1.5 lbs Ground Beef (85/15 lean ratio)
  • 3 large Yellow Onions, thinly sliced
  • 1.5 cups Long grain white rice, uncooked
  • 3 cups Low sodium beef broth, non-alcoholic
  • 1.5 cups Swiss cheese, shredded
  • 1 tsp Garlic powder

Method

  1. Preheat your oven to 375 degrees Fahrenheit.
  2. Heat a large skillet over medium heat and brown the ground beef thoroughly.
  3. Remove the beef from the pan and drain excess fat, leaving about a tablespoon for the onions.
  4. Sauté the sliced onions in the remaining beef fat until they reach a deep, dark golden brown color.
  5. In a 9x13 baking dish, combine the browned beef, caramelized onions, uncooked rice, beef broth, and garlic powder.
  6. Stir the mixture thoroughly until all ingredients are evenly distributed.
  7. Cover the baking dish tightly with aluminum foil to trap the steam.
  8. Bake for 35 minutes until the liquid has been fully absorbed by the rice.
  9. Remove the foil, sprinkle the top evenly with shredded Swiss cheese.
  10. Bake uncovered for an additional 5 minutes or until the cheese is bubbly and melted.

Notes

For the best flavor, do not rush the caramelization of the onions; allow them to deepen to a rich golden brown. Ensure the foil is sealed tightly to prevent the rice from drying out during the baking process. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the microwave or oven.
