Easy Orzo Pasta Salad With Feta And Sun Dried Tomatoes

Ingredients
  

  • 16 oz Orzo Pasta
  • 6 oz Feta Cheese, crumbled
  • 1 cup Sun Dried Tomatoes, oil-packed
  • 2 cups Fresh Spinach
  • 1/4 cup Extra Virgin Olive Oil
  • 2 tbsp Fresh Lemon Juice
  • 2 cloves Garlic, minced
  • Salt to taste

Method
 

  1. Boil a large pot of salted water over high heat.
  2. Add the orzo pasta once the water reaches a rapid boil.
  3. Cook the pasta for nine minutes or until al dente.
  4. Drain the pasta using a fine-mesh colander.
  5. Rinse the cooked orzo with cold water to stop the cooking process.
  6. Whisk the olive oil, lemon juice, minced garlic, and salt in a small mixing bowl.
  7. Combine the cooled orzo with the chopped sun dried tomatoes in a large serving bowl.
  8. Fold in the fresh spinach and the crumbled feta cheese.

Notes

Use block feta and crumble it by hand for the best texture. You can substitute spinach with fresh arugula for a peppery bite. This salad is excellent for meal prep as flavors improve after sitting in the refrigerator.
