  • 4 cups Russet potatoes, sliced 1/8 inch thick
  • 1 medium onion, diced small
  • 1 can cream of mushroom soup
  • 2 cups cheddar cheese, freshly shredded
  • 4 slices turkey bacon, cooked and crumbled
  • Salt, pepper, and garlic powder to taste

Method

  1. Preheat your oven to 375 degrees Fahrenheit.
  2. Grease a 9x13 inch baking dish with non-stick cooking spray.
  3. Brown the ground beef in a skillet over medium-high heat until fully cooked.
  4. Drain excess grease thoroughly from the beef.
  5. Add the diced onions to the skillet and sauté until translucent.
  6. Layer half of the potato slices into the prepared baking dish.
  7. Spread the seasoned beef and onion mixture evenly over the potatoes.
  8. Cover with the remaining potato slices.
  9. Whisk the cream of mushroom soup with a splash of water and pour evenly over the layers.
  10. Cover with foil and bake for 30 minutes.
  11. Remove the foil, top with cheddar cheese and crumbled turkey bacon, and bake for an additional 15 minutes until potatoes are tender and cheese is bubbly.

Notes

Ensure potatoes are sliced thin for even cooking. For extra flavor, sprinkle a little paprika over the top before baking. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
