Ingredients
  

  • 2 cups chicken breast, diced and pre-cooked
  • 1.5 cups white rice, long grain or jasmine
  • 3 cups broccoli florets, fresh and chopped small
  • 3 cups chicken broth, low sodium
  • 1 can cream of mushroom condensed soup
  • 2 cups cheddar cheese, freshly shredded
  • 1 tsp onion powder

Method
 

  1. Preheat your oven to 375 degrees Fahrenheit.
  2. Grease a 9x13 inch baking dish with olive oil.
  3. Combine the uncooked rice, diced chicken, and broccoli in the prepared baking dish.
  4. Whisk the cream of mushroom soup with chicken broth and onion powder in a medium bowl.
  5. Pour the liquid mixture evenly over the rice and vegetable base.
  6. Cover the dish tightly with aluminum foil to trap moisture.
  7. Bake the casserole for 35 minutes until the liquid absorbs.
  8. Remove the foil carefully to avoid steam burns.
  9. Sprinkle the shredded cheddar cheese across the entire surface.
  10. Bake for an additional 5 minutes until the cheese bubbles and turns golden brown.

Notes

Chop broccoli florets into bite-sized pieces to ensure even cooking. Ensure the foil is sealed tightly to allow the rice to steam properly within the broth. If the rice feels too firm, let the dish rest for 5 minutes after removing from the oven.
