Ingredients

  • 2 cups cooked chicken breast, shredded
  • 2 cups cooked white rice
  • 3 cups fresh broccoli florets, blanched
  • 1 can (10.5 oz) low-sodium cream of chicken soup
  • 1.5 cups Ritz crackers, coarsely crushed
  • 4 tablespoons unsalted butter, melted
  • 1 cup shredded sharp cheddar cheese

Method

  1. Preheat your oven to 375 degrees Fahrenheit.
  2. In a large mixing bowl, combine the shredded chicken, cooked rice, blanched broccoli, and condensed cream of chicken soup until well incorporated.
  3. Stir in half of the shredded cheddar cheese into the chicken and rice mixture.
  4. Transfer the mixture into a greased 9x13 inch baking dish, spreading it evenly.
  5. In a small bowl, combine the crushed Ritz crackers and melted butter, mixing until the crumbs are coated.
  6. Sprinkle the remaining half of the cheddar cheese over the casserole, followed by the buttered cracker mixture.
  7. Bake for 30 minutes or until the edges are bubbling and the topping is golden brown.

Notes

You can substitute turkey breast for the chicken. If using brown rice, note that it will provide a nuttier flavor and denser texture. Store leftovers in an airtight container in the refrigerator for up to 3 days.
