Ingredients

  • 2 lbs boneless, skinless chicken breasts, halved lengthwise
  • 1/2 cup sun-dried tomatoes, oil-packed and chopped
  • 1 cup heavy cream
  • 3 cups fresh spinach
  • 4 cloves garlic, minced
  • 1/2 cup low-sodium vegetable stock
  • 1/2 cup parmesan cheese, freshly grated
  • 2 tbsp extra virgin olive oil
  • Salt, pepper, and dried oregano to taste

Method

  1. Heat olive oil in a large skillet over medium-high heat until shimmering.
  2. Season chicken breasts with salt, pepper, and dried oregano on both sides.
  3. Sear chicken for 5-7 minutes per side until golden brown, then remove and set aside.
  4. Add minced garlic to the same skillet and sauté for 1 minute until fragrant.
  5. Pour in the vegetable stock and deglaze the pan, scraping up any browned bits.
  6. Stir in the heavy cream and sun-dried tomatoes, simmering until slightly thickened.
  7. Add the fresh spinach and cook until wilted.
  8. Stir in the parmesan cheese until melted and smooth.
  9. Return the chicken to the skillet, coating it thoroughly with the sauce, and heat through for another 2 minutes.

Notes

Ensure you use full-fat cream for the best velvety texture. Freshly grated parmesan is recommended as pre-grated versions often contain anti-caking agents that affect the sauce consistency. Serve over pasta, mashed potatoes, or with crusty bread.
