Ingredients

  • 3 lbs Yukon Gold potatoes, peeled and diced into 1-inch cubes
  • 8 oz smoked Gouda cheese, freshly shredded
  • 4 slices chicken ham, diced and sautéed until crispy
  • 4 cups low-sodium vegetable stock
  • 1 cup heavy cream
  • 1 large yellow onion, finely diced
  • 3 cloves garlic, minced
  • 3 tbsp unsalted butter

Method

  1. Heat butter in a large heavy-bottomed pot over medium heat.
  2. Add the diced onion and sauté until translucent, approximately five minutes.
  3. Stir in the minced garlic and cook for one additional minute until fragrant.
  4. Add the diced Yukon Gold potatoes to the pot and coat them in the onion-butter mixture.
  5. Pour in the vegetable stock and bring the mixture to a boil.
  6. Reduce heat to low, cover, and simmer for 20 minutes or until potatoes are fork-tender.
  7. Use an immersion blender to partially blend the soup to your desired consistency.
  8. Stir in the heavy cream and gradually fold in the shredded smoked Gouda until melted and smooth.
  9. Serve warm, topped with the crispy diced chicken ham.

Notes

For a lighter soup, you can substitute the heavy cream with half-and-half. Ensure the Gouda is shredded fresh to ensure a smooth, emulsified texture. If you do not have an immersion blender, carefully transfer some of the soup to a standard blender, pulse, and return to the pot.
