Method
- Season the diced chicken breast with salt, black pepper, and garlic powder.
- Heat olive oil in a large skillet over medium-high heat.
- Sear the chicken until golden brown and cooked through, then remove from the pan.
- Add minced garlic to the same pan and saute for one minute until fragrant.
- Pour in the chicken broth, scraping the bottom of the pan to release the browned bits.
- Reduce heat to low and stir in the heavy cream.
- Add the freshly grated parmesan cheese and stir until melted and smooth.
- Cook the tortellini according to package directions, drain, and add to the sauce.
- Stir in the spinach and the cooked chicken, heating until the spinach is wilted and the chicken is warmed through.
Notes
Ensure you use freshly grated parmesan for the best sauce texture as pre-grated cheese often contains anti-caking agents. Half-and-half can be used as a lighter alternative to heavy cream.
