Ingredients

  • 1.5 lbs Chicken Breast, cut into bite-sized pieces
  • 12 oz Fettuccine pasta
  • 1.5 cups Heavy cream, room temperature
  • 1 cup Parmesan cheese, freshly grated
  • 4 cloves Garlic, minced
  • 0.5 cup Chicken broth, low sodium
  • 2 tbsp Olive oil
  • 2 tbsp Fresh parsley, chopped

Method

  1. Boil a large pot of salted water and cook the fettuccine according to package directions until al dente.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Sear the chicken pieces until golden brown and fully cooked through.
  4. Remove the chicken from the skillet and set it aside on a clean plate.
  5. Sauté the minced garlic in the same skillet until fragrant, about one minute.
  6. Pour in the chicken broth and heavy cream, bringing to a gentle simmer.
  7. Whisk in the freshly grated parmesan cheese slowly until smooth and thickened.
  8. Return the chicken to the pan and toss in the cooked fettuccine.
  9. Garnish with fresh parsley before serving.

Notes

Ensure the heavy cream is at room temperature to prevent it from curdling when added to the pan. Always use freshly grated parmesan rather than pre-grated cheese for the best melting consistency. Store leftovers in an airtight container for up to 3 days, adding a splash of milk or broth when reheating as the sauce may thicken in the fridge.
