  • 1.5 lbs chicken breast, cubed
  • 20 oz cheese tortellini
  • 4 tbsp unsalted butter
  • 5 cloves garlic, minced
  • 2 cups heavy cream
  • 0.5 cup low-sodium chicken broth
  • 1 cup freshly grated Parmesan cheese
  • 2 cups fresh baby spinach
  • 4 slices turkey bacon, chopped

Method
 

  1. Preheat oven to 375 degrees Fahrenheit and grease a 9x13 inch baking dish.
  2. Boil a large pot of salted water and cook tortellini for two minutes less than package directions, then drain.
  3. Heat a large skillet over medium-high heat and melt butter.
  4. Sear chicken pieces until golden brown, then remove from the pan.
  5. Add garlic to the skillet and sauté until fragrant.
  6. Stir in chicken broth and heavy cream, bringing to a gentle simmer.
  7. Stir in Parmesan cheese until melted and sauce thickens slightly.
  8. Add spinach and cook until wilted.
  9. Combine chicken, tortellini, and turkey bacon into the sauce.
  10. Transfer mixture to the prepared baking dish.
  11. Bake for 30 minutes until the top is golden and bubbling.

Notes

Substitute half-and-half for heavy cream if a lighter texture is preferred. Ensure the tortellini is slightly undercooked before baking to prevent it from becoming mushy.
