- Heat a large skillet or Dutch oven over medium-high heat.
- Add the diced turkey bacon and cook until crisp.
- Remove the turkey bacon and reserve for garnish.
- Add the chicken pieces to the skillet and brown until golden.
- Remove chicken and set aside.
- Sauté the minced garlic in the remaining pan juices until fragrant.
- Pour in the chicken stock and bring the liquid to a gentle boil.
- Stir in the dry orzo and return the browned chicken to the pan.
- Simmer for 8 to 10 minutes until the pasta is al dente and the liquid has reduced to a creamy consistency.
- Stir in the mixed vegetables, heavy cream, and fresh thyme, cooking for an additional 2-3 minutes until heated through.
- Garnish with the crispy turkey bacon before serving.
Notes
Substitute heavy cream with half-and-half for a lighter texture. If using dried thyme instead of fresh, use 1 teaspoon. Store leftovers in an airtight container for up to 3 days; the sauce thickens upon cooling, so add a splash of stock when reheating.
