  • 1 lb Chicken Breast, diced
  • 16 oz Potato Gnocchi
  • 2 cups Chicken Broth
  • 1 cup Heavy Cream
  • 3 cups Fresh Spinach, chopped
  • 3 Garlic Cloves, minced
  • 4 slices Turkey Bacon, diced
  • 0.5 cup Parmesan Cheese, grated
  • 1 tbsp Olive Oil

Method
 

  1. Heat olive oil in a large skillet over medium-high heat and sear the chicken until golden brown, then set aside.
  2. Sauté the turkey bacon in the same skillet until crispy.
  3. Add the minced garlic and cook for 30 seconds until fragrant.
  4. Pour in chicken broth to deglaze the pan, scraping up any bits.
  5. Stir in the heavy cream and bring to a gentle simmer.
  6. Add the gnocchi to the sauce and cook until soft.
  7. Return the chicken to the pan and stir in the spinach and parmesan cheese until the spinach wilts and the sauce thickens.

Notes
