Ingredients

  • 1.5 lbs chicken breast, sliced into bite-sized strips
  • 2 tbsp cajun seasoning
  • 12 oz penne pasta
  • 1.5 cups heavy cream
  • 1 cup parmesan cheese, freshly grated
  • 4 cloves garlic, minced
  • 3 tbsp unsalted butter
  • 0.5 cup low-sodium chicken broth

Method

  1. Boil a large pot of salted water and cook the pasta according to package directions until al dente.
  2. Season the chicken breast strips liberally with the cajun spice blend.
  3. Heat two tablespoons of butter in a large skillet over medium-high heat.
  4. Sear the chicken in batches until golden brown and cooked through, then remove and set aside.
  5. In the same skillet, melt the remaining tablespoon of butter and sauté the garlic until fragrant.
  6. Pour in the chicken broth and heavy cream, bringing the mixture to a gentle simmer.
  7. Whisk in the parmesan cheese until the sauce thickens and becomes smooth.
  8. Return the chicken to the skillet, toss in the cooked pasta, and stir until everything is well coated and heated through.

Notes

Use fettuccine as a substitute if you prefer wider noodles. Ensure the heavy cream is at room temperature before adding to the skillet to prevent curdling. Freshly grated parmesan is essential for the best sauce texture.
