Ingredients

  • 1.5 lbs chicken breast, cubed
  • 1 can (14oz) full-fat coconut milk
  • 1.5 cups jasmine rice, rinsed
  • 2 large limes, zested and juiced
  • 1 tablespoon ginger, minced finely
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 1 tablespoon coconut oil

Method

  1. Dice the chicken breast into even one-inch cubes.
  2. Rinse the jasmine rice under cold water until the water runs clear.
  3. Zest the limes and squeeze the juice into a small bowl.
  4. Heat coconut oil in a large heavy-bottomed skillet over medium-high heat.
  5. Sear the chicken pieces until golden brown, then remove from the pan.
  6. Sauté the garlic and ginger in the same pan until fragrant.
  7. Stir in the jasmine rice and toast lightly for one minute.
  8. Pour in the chicken broth and coconut milk, scraping the bottom of the pan.
  9. Return the chicken to the skillet, bring to a simmer, then cover and cook for 15-20 minutes until rice is tender.
  10. Stir in lime juice and zest before serving.

Notes

Ensure you rinse the rice thoroughly to prevent the dish from becoming overly starchy. Full-fat coconut milk is recommended for the best flavor and texture. You can garnish with fresh cilantro or sliced scallions for added color and flavor.
