Ingredients

  • 1 lb Beef Sirloin, thinly sliced against the grain
  • 8 oz Cremini or white button mushrooms, sliced
  • 8 oz Keto egg noodles (konjac or almond flour base)
  • 1 cup Unsalted beef broth
  • 1/2 cup Heavy cream
  • 1/2 cup Sour cream, room temperature
  • 2 tbsp Grass-fed butter
  • 1/2 cup Onion, finely diced

Method

  1. Heat one tablespoon of butter in a large skillet over medium-high heat.
  2. Sear the thinly sliced beef until browned on all sides, then remove from the pan.
  3. Sauté the sliced mushrooms and diced onions in the same skillet until they release their moisture.
  4. Pour the beef broth into the skillet to deglaze the surface, scraping up all flavorful browned bits.
  5. Reduce the liquid by half to concentrate the flavors.
  6. Stir in the heavy cream and return the cooked beef to the skillet to simmer gently.
  7. Remove the skillet from the heat to prevent the dairy from curdling.
  8. Whisk in the room-temperature sour cream until the sauce is smooth and velvety.
  9. Serve immediately over prepared keto egg noodles.

Notes

Ensure the sour cream is at room temperature before whisking it in to prevent the sauce from breaking. Prepare the keto noodles separately according to package instructions before combining with the sauce. Store leftovers in an airtight container for up to 3 days.
