  • 1 cup cooked chicken breast, shredded or diced
  • 1.5 cups low-sodium marinara sauce
  • 1 cup fresh spinach, packed
  • 0.5 cup mozzarella cheese, freshly shredded
  • 2 tbsp parmesan cheese, grated
  • 1 tsp dried Italian seasoning
  • Olive oil for greasing

Method
 

  1. Preheat your oven to 375 degrees Fahrenheit.
  2. Grease an 8-inch square baking dish with a small amount of olive oil.
  3. Cook the refrigerated tortellini in boiling water for two minutes less than the package instructions.
  4. Drain the pasta well to prevent excess moisture.
  5. Combine the cooked pasta, shredded chicken, marinara sauce, and spinach in a large mixing bowl.
  6. Stir the mixture gently to coat the tortellini evenly.
  7. Transfer the mixture into your prepared baking dish.
  8. Top the assembly with the shredded mozzarella and Parmesan cheeses.
