Ingredients
Method
- Rinse the rice under cold water until the water runs clear.
- In a medium pot, sauté half the minced garlic in 1 tablespoon of butter until fragrant.
- Add the rice to the pot and toast for two minutes.
- Pour in the chicken broth, bring to a simmer, cover, and cook on low for 18 minutes.
- Stir in the parmesan cheese once the rice is tender and fluffy.
- Season chicken cutlets with salt and black pepper.
- In a large skillet, heat the remaining butter and garlic over medium-high heat.
- Sear the chicken until golden brown and cooked through.
- Stir in the lemon juice and fresh parsley, tossing the chicken to coat in the sauce.
- Serve the chicken over a bed of the prepared garlic parmesan rice.
Notes
Ensure you rinse the rice thoroughly to remove excess starch for the best fluffy texture. Use high-quality chicken broth for depth of flavor. If the sauce becomes too thick, add a tablespoon of hot water or extra broth to thin it out.
