Ingredients

  • 2 lbs chicken breast, cooked and shredded
  • 8 oz chicken ham, diced finely
  • 2 cups Swiss cheese, shredded
  • 1 cup chicken broth, low sodium
  • 1 cup heavy cream
  • 2 tbsp Dijon mustard
  • 1 cup Panko breadcrumbs
  • 4 slices turkey bacon, cooked and crumbled

Method

  1. Preheat your oven to 375 degrees Fahrenheit.
  2. Grease a 9x13 inch baking dish with olive oil or butter.
  3. Combine the shredded chicken and diced chicken ham in the prepared baking dish.
  4. Whisk the chicken broth, heavy cream, and Dijon mustard in a small bowl until smooth.
  5. Pour the cream mixture evenly over the chicken and ham layers.
  6. Top the mixture with the shredded Swiss cheese and crumbled turkey bacon.
  7. Sprinkle the panko breadcrumbs over the cheese for added crunch.
  8. Bake the casserole for 30 minutes until the edges bubble and the top turns golden brown.
  9. Remove from the oven and let it sit for 5 minutes before serving.

Notes

Ensure chicken is cooked and cooled slightly before shredding for best texture. If the Panko browns too quickly, cover the dish loosely with aluminum foil during the last 10 minutes of baking. Store leftovers in an airtight container in the refrigerator for up to 3 days.
