Ingredients
  

  • 3 cups cooked chicken, shredded
  • 4 cups fresh broccoli florets
  • 2 cups pre-cooked white rice
  • 1 can cream of chicken soup
  • 2 cups sharp cheddar cheese, shredded
  • 0.5 cup chicken broth
  • 4 strips turkey bacon, cooked and crumbled
  • 1 tsp onion powder

Method
 

  1. Preheat your oven to 375 degrees Fahrenheit.
  2. Grease a 9x13 inch baking dish with non-stick cooking spray.
  3. In a large mixing bowl, combine the shredded chicken, cooked rice, and steamed broccoli.
  4. Stir in the cream of chicken soup, chicken broth, onion powder, and half of the shredded cheese until evenly coated.
  5. Transfer the mixture into the prepared baking dish and spread it into an even layer.
  6. Sprinkle the remaining cheese and the crumbled turkey bacon over the top.
  7. Bake for 40 minutes or until the edges are bubbling and the cheese is melted and golden.

Notes

Steam the broccoli lightly before adding to the mix for the best texture. You can substitute the white rice with brown rice for added fiber. Store any leftovers in an airtight container in the refrigerator for up to 3 days.
