Ingredients

  • 1 lb Potato Gnocchi (store-bought or fresh)
  • 6 slices Turkey Bacon, diced
  • 1 lb Chicken Breast, cooked and shredded
  • 1.5 cups Heavy Cream
  • 2 cups Mozzarella Cheese, shredded
  • 2 cups Fresh Baby Spinach
  • 3 cloves Garlic, minced

Method

  1. Preheat your oven to 375 degrees Fahrenheit.
  2. Sauté the diced turkey bacon in a large oven-safe skillet until crispy.
  3. Add the minced garlic and shredded chicken to the skillet, cooking for three minutes until fragrant.
  4. Pour the heavy cream into the skillet and reduce heat to low, simmering until the sauce thickens slightly.
  5. Stir in the fresh spinach and one cup of the mozzarella cheese until smooth.
  6. Toss the cooked gnocchi into the sauce until thoroughly coated.
  7. Top the dish with the remaining cup of mozzarella cheese.
  8. Bake in the oven for 15 minutes or until the cheese is golden and bubbling.

Notes

You can boil the gnocchi for 2-3 minutes before adding to the skillet if you prefer a softer texture, though they will cook through in the sauce. Store leftovers in an airtight container for up to 3 days. Reheat in the oven or microwave until hot.
