Ingredients
  

  • 1 lb ground beef (85/15 lean)
  • 1.5 cups long-grain white rice
  • 3 cups beef broth (low-sodium)
  • 2 tbsp taco seasoning
  • 2 cups shredded cheddar cheese
  • 1 can black beans (rinsed and drained)
  • 1 can diced tomatoes (undrained)

Method
 

  1. Heat a large heavy-bottomed skillet over medium-high heat.
  2. Add ground beef and cook, breaking it apart, until no longer pink.
  3. Drain excess fat from the skillet.
  4. Stir in the taco seasoning until the beef is well coated.
  5. Add the uncooked rice, black beans, and diced tomatoes with their juices.
  6. Pour in the beef broth and bring the mixture to a gentle boil.
  7. Reduce heat to low, cover the skillet, and simmer for 20 minutes until the rice is tender.
  8. Remove from heat, stir to fluff the mixture, and top with shredded cheddar cheese.
  9. Cover for 2-3 minutes to allow the cheese to melt fully before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Use fresh shredded cheese rather than pre-shredded bags for a creamier melt. You can customize the dish by adding diced bell peppers or onions during the beef browning stage.
