Ingredients

  • 2 lbs ground beef (85% lean)
  • 6 slices turkey bacon, cooked and chopped
  • 1 cup chicken ham, finely diced
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup low-moisture mozzarella cheese, shredded
  • 1 cup plain or Italian breadcrumbs
  • 2 large eggs, beaten
  • 1 medium onion, finely diced
  • 1.5 cups no-salt-added tomato sauce

Method

  1. Preheat your oven to 375 degrees Fahrenheit.
  2. Grease a 9x13 inch casserole dish lightly with cooking spray or olive oil.
  3. In a large mixing bowl, combine the ground beef, chopped turkey bacon, diced chicken ham, breadcrumbs, eggs, and diced onions.
  4. Fold in half of the cheddar cheese and half of the mozzarella cheese into the meat mixture.
  5. Press the mixture evenly into the prepared casserole dish.
  6. Spread the tomato sauce over the top of the meatloaf mixture.
  7. Bake for 45 minutes.
  8. Sprinkle the remaining cheddar and mozzarella cheese over the top.
  9. Return to the oven for an additional 5 minutes or until the cheese is melted and bubbly.
  10. Let the casserole rest for 5-10 minutes before slicing and serving.

Notes

Ensure the turkey bacon is fully cooked and crispy before adding to the mixture to avoid excess moisture. You can add extra herbs like parsley or oregano for a boost of flavor. Store leftovers in an airtight container for up to 3 days.
