Ingredients

  • 1 lb lean ground beef (90/10)
  • 4 cups Russet potatoes, cubed into 1-inch pieces
  • 4 cups low-sodium chicken stock
  • 2 cups sharp cheddar cheese, freshly shredded
  • 1 cup whole milk
  • 1 medium onion, diced finely
  • 4 slices turkey bacon, cooked and crumbled

Method

  1. Brown the ground beef in a skillet over medium-high heat until no pink remains.
  2. Drain the excess fat from the skillet thoroughly.
  3. Combine the browned beef, cubed potatoes, and onions in the slow cooker bowl.
  4. Pour the chicken stock over the ingredients until the mixture is fully submerged.
  5. Cook on low for 6 to 7 hours until potatoes are fork-tender.
  6. Stir in the milk and shredded cheddar cheese until the cheese is completely melted.
  7. Whisk the soup gently to incorporate the cheese into the broth base.
  8. Serve the bowls immediately topped with the crumbled turkey bacon.

Notes

Use freshly shredded cheese for the best melting consistency. If you prefer a thicker soup, you can mash a few of the potatoes against the side of the slow cooker once finished. Store leftovers in an airtight container in the refrigerator for up to 3 days.
