Ingredients
  

  • 1 lb Chicken breast, cubed
  • 12 oz Rotini pasta
  • 2 tbsp Cajun seasoning
  • 4 cloves Garlic, minced
  • 3 cups Low-sodium chicken broth
  • 1 cup Heavy cream
  • 2 cups Cheddar cheese, freshly shredded
  • 1/2 cup Chicken ham, finely diced
  • 2 tbsp Olive oil

Method
 

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add cubed chicken and brown until fully cooked through, then remove and set aside.
  3. In the same skillet, sauté minced garlic and diced chicken ham until fragrant.
  4. Pour in the chicken broth and scrape the bottom of the pan to release browned bits.
  5. Stir in the Cajun seasoning and dry rotini pasta.
  6. Cover and simmer until the pasta is al dente and most of the liquid is absorbed.
  7. Stir in the heavy cream and shredded cheddar cheese until melted and smooth.
  8. Return the cooked chicken to the skillet, toss to combine, and serve warm.

Notes

Substitute heavy cream with half-and-half for a lighter sauce consistency.
Ensure you shred the cheddar cheese from a block for better melting properties.
This dish stores well in an airtight container for up to 3 days in the refrigerator.
