Ingredients

  • 1 lb chicken breast, diced into bite-sized pieces
  • 16 oz refrigerated cheese tortellini
  • 2 tbsp Cajun seasoning
  • 5 cloves garlic, minced
  • 1 cup heavy cream
  • 0.5 cup chicken broth
  • 0.5 cup Parmesan cheese, freshly grated
  • 2 tbsp unsalted butter

Method

  1. Toss the diced chicken with Cajun seasoning in a medium bowl until fully coated.
  2. Heat butter in a large skillet over medium-high heat until it begins to shimmer.
  3. Add the seasoned chicken pieces to the skillet and sear for 5-6 minutes until golden brown and cooked through.
  4. Remove the chicken from the skillet and set aside on a plate.
  5. Reduce heat to medium and add minced garlic to the skillet, cooking for 60 seconds until fragrant.
  6. Pour in chicken broth to deglaze the skillet, scraping up any browned bits.
  7. Stir in the heavy cream and Parmesan cheese, simmering until the sauce thickens.
  8. While the sauce simmers, boil the tortellini in salted water according to package directions, then drain.
  9. Return the chicken to the skillet with the sauce and fold in the cooked tortellini until everything is well coated and heated through.

Notes

Use low-sodium chicken broth to better control the salt content. You can substitute heavy cream with half-and-half for a lighter sauce consistency. Freshly grated Parmesan is highly recommended for the best texture and flavor.
