Ingredients

  • 2 lbs chicken breast, boneless and skinless
  • 3 cans cannellini beans, rinsed and drained
  • 4 oz canned diced green chilies
  • 4 cups low sodium chicken broth
  • 1 cup plain non-fat Greek yogurt
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh lime juice for serving

Method

  1. Heat olive oil in a large stockpot over medium heat.
  2. Add diced onion and cook until translucent, about 5 minutes.
  3. Stir in minced garlic, cumin, and chili powder, cooking for 1 minute until fragrant.
  4. Mash half of the cannellini beans in a separate bowl to enhance the creamy texture.
  5. Pour chicken broth, green chilies, and both whole and mashed beans into the stockpot and bring to a slow boil.
  6. Place raw chicken breasts into the liquid, reduce heat, and simmer for 20 minutes.
  7. Remove chicken breasts from the pot, shred using two forks, and return the meat to the pot.
  8. Stir in the Greek yogurt until fully incorporated and smooth.
  9. Serve warm with a squeeze of fresh lime juice.

Notes

Mashing half the beans before adding them to the pot is key to achieving a thick, creamy consistency without adding heavy creams. Store leftovers in an airtight container for up to 4 days.
