Ingredients
  

  • 1.5 lbs chicken breast, cut into bite-sized cubes
  • 1.5 cups white rice (long grain or jasmine)
  • 3 cups low-sodium chicken broth
  • 1 can cream of mushroom soup
  • 1 tsp garlic powder
  • 1 tbsp Italian seasoning
  • 2 tbsp unsalted butter

Method
 

  1. Heat the butter in a large skillet over medium-high heat until melted.
  2. Add the cubed chicken to the skillet and sear until golden brown on all sides.
  3. Remove the chicken from the skillet and set aside.
  4. Pour the chicken broth into the same skillet to deglaze the bottom.
  5. Stir in the cream of mushroom soup, garlic powder, and Italian seasoning until the mixture is uniform.
  6. Add the uncooked rice to the broth mixture and ensure it is submerged.
  7. Place the seared chicken back into the pan, distributing it evenly.
  8. Reduce heat to low, cover with a tight-fitting lid, and simmer for 20-25 minutes until the liquid is absorbed and rice is tender.

Notes

Use fresh minced garlic instead of garlic powder for a more aromatic flavor. Ensure the lid fits tightly to allow the rice to steam properly. For a lighter version, use low-fat cream of mushroom soup.
